gear: what to bring along for the ride

So OK, I've tried to compile a decent list of gear below. I'm only bringing 2 rear panniers so I can't overpack even if I try. (I learned alot about overpacking on the Appalachian Trail and I don't want to go through that again.) It's pretty easy to buy stuff along the way if you need it but it's a real drag to send stuff home.

I also wanted to somehow bring more hiking/backing gear (backpack, trekking poles, water filter, etc.) but it's just too hard to get all that on a bike so I'm leaving it at home and if I need it I will either buy new stuff or have it sent to me along the way.
